For the very few of you that may not know, my husband and I are kind of coffee house obsessed. We go at least once a week (that’s all the graduate student budget allows!).
Back in January or February, one of our local shops, Kayaks had these amazing Cinnamon Chip Scones. Once I had them, I fell in love. Considering the graduate student budget does not provide for the mass purchase of scones, I decided to invest in making them myself.
These scones are such a hit that I make them at least once (or twice) a month. Plus, they only take about a half hour to 45 minutes, start to finish!
Cinnamon Chip Scones
2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 tbls. sugar
1/2 cup (or 1 stick for those easily confused) butter, softened
1 c. cinnamon baking chips
1 egg, separated
1 tsp. vanilla
3/4 c. buttermilk
*Combine flour, baking powder, baking soda, salt, and sugar in a mixing bowl. Add the soft butter slowly, mixing well.
*In a separate bowl, combine egg yolk, vanilla, and buttermilk. Add to the dry ingredients, mixing completely. Stir in the cinnamon chips.
*Preheat your oven to 375 degrees Fahrenheit.
*On a floured surface, roll out the dough to 1/2 inch thick. Cut into scones (aka 12 triangles) and place on an ungreased cookie sheet. Brush the egg white over the scones, and sprinkle on the cinnamon sugar.
*Bake 18 minutes. Cool on the cookie sheet for 5 minutes before moving and consuming.
